Halloween Inspired Cupcakes

Hey guys! I feel like its been so long since I wrote on here, but I wont bore you with the excuses. So moving on from the past month/two months of no blog posts or very little, Im bringing you something extra tasty to help you get in the halloween mood! These are chocolatey, cream cheese goodness that is sure to leave you wanting more. So if you're interested in knowing how to bake these treats then you best read on! 

Ok so lets start with the ingredients... 

Cupcake Batter 
  • 120g Self Raising Flour 
  • 90g Cocoa Powder 
  • 200g Caster Sugar 
  • 4tbsp Of Natural Yogurt 
  • Spash of milk (50ml roughly) 
  • 2 Eggs
  • 200g Butter
  • 2 caps of vanilla essence
Creme Cheese Frosting 
  • 200g Cream Cheese
  • 350-400g Icing Sugar (depending on taste/thickness) 
  • 50g Butter 
  • 100g White chocolate 
  • Red/Orange Food Colouring/Gel 
Decoration 
  • Mini marshmallows 
  • Milk chocolate (1 chunk) 

Cupcake Batter is the best!

-Begin by 'creaming' the butter, you can use an electric whisk, do it by hand (or if you are super fancy use a stand mixer). This step takes less than 10 seconds. 
-Next add your sugar (sift first) and combine with the butter. Once this is done add your 2 eggs. 
-Sift half the cocoa/flour to the mixture and beat on a low setting, then add the rest and re-peat. 
-To take away any eggy taste and to enhance the flavourings pop in the 2 caps of vanilla essence. 
-Lastly add in the yogurt and milk and mix. Don't forget to scrape the edges so there is no waste!
-Pop into cupcake cases (using a ice cream scoop helps) and stick into the oven on around 190c for around 20 mins or until a tooth pick when poked comes out clean. 

Leave to cool 

Just a little bit of frosting.. 

-Melt the white chocolate in 30 second intervals (if your using the microwave) and leave to cool until roughly room temp.
-Mix the butter, half the icing sugar and cream cheese together. (Be careful not to create icing sugar clouds!) Then add the rest of the sugar.
-Lastly add the chocolate and food colouring.
-Once you've made the frosting and you have the colour you want, pop it into a piping bag and begin to pipe on your cakes.
-Lastly finish off: with a dusting of cocoa powder, 2 white mini marshmallows on each cupcake and use the milk chocolate to make little eyes.

Thats it! Simple.. You can add more or less decorations if you want, they are perfect for any halloween party and taste lovely!
